CLOSED for the season! What about wild hogs?

We don't have staff on hand to skin and clean your wild hogs in the off-season. However, if you will carefully wash, then skin and clean them, pack the meat in a cooler with ice, we can process them for you the next time we are working on Cordray Farms beef. Just be sure to call and set up an appointment to bring in the meat. Be sure to talk with someone before heading out as the gate will be shut and you won't be able to leave your meat for processing. Call us at 843.766.7922.

Hello, Friends!
Well, we've made it through another deer season! Tomorrow is the last day we'll be open until August 15th. If we make Easter hams, applewood bacon, or have Cordray Farms Beef for sale, I'll contact you via our email list. Last year we opened for a few Saturdays when we knew we had lots of Beef Share folks heading our way. I'll put the word out should that happen again!
Thought I'd give you a quick rundown of what's in the store now for your last chance to stock up!

Cordray Farms Beef:

plenty of hamburger in the 1.3 lb. chubs
Snack sticks in plain, cheese and cheese and jalapeno flavors
Smoked Sausage with cheese and jalapenos and Smoked Sausage with just cheese
Summer Sausage with cheese and jalapenos

I know that I have a wrong number for at least one of these folks, so you'd be helping them out if you contact them to be sure that they know they still have an order here. You never know, they might be willing to give their unwanted order to you!

This is the law: "Deer processors should recognize that it is unlawful to sell deer meat to regain the processing fee for deer that have not been picked-up by the owner (50-11-1910). The best practice is to take a deposit for the processing service when the deer is left at the facility. If meat is not picked- up by the owner, it can be given to another individual at no charge."

As I mentioned, we had a record breaking last week of the season. All our processor friends are reporting lots of deer taken in the last few days. When the deer start pouring in, you really only have 2 choices. Some processors closed their gates and weren't open to take in any more deer. We chose not to do that. We promised we'd be here through the end of the season and we kept that promise. We started cutting deer on Sunday and have been at it pretty much nonstop since then. The freezer is almost full already. I will be calling you to pick up your order just as soon as we finish it. I really need you to come right away or send someone to get it. I know many folks like to wait until all their orders are complete to make the trip, but we need to make room right now. If you need to send someone to pick it up for you, I'll be glad to take your payment info. over the phone. We're here until 7 each night, but if you need us to be open later so you can come after work, we will. We've committed to taking in deer for the Youth Hunt on Saturday, Jan. 7th so we will be hard at it all week making room! Thank you so much for helping with this great problem to have!

Traditionally if the season ended on Sunday, the last day was Monday. This is the first year the season will end on Sunday night at sundown. Doe days are Saturday and Sunday. We will be open 9 to 9 on Saturday and Sunday! Next week, we'll be open 9 am to 7 pm for checking in your wild hogs and venison pieces and picking up orders.

It's NEVER cold enough here to leave your deer or wild hog overnight without field dressing it!

If you can't get your animal to us in the evening, be sure to field dress it. (Open carcass right below the ribs and pull all the guts out.) If it's going to get above 32 degrees, stuff some bags of ice in the body cavity to begin the cooling process. Think about it. At every beef and pork facility, animals are gutted, skinned, and cooled within 30 minutes of slaughter. Why should deer, especially ones that may be gutshot, be any different? We've turned away over $1000 in deer and wild hog processing in the last few days that were left overnight. Deer found in the morning or left in the back of trucks do not provide quality meat. Will it kill you if you eat it? Probably not, but the meat is not good flavor and often has to be discarded later. We pride ourselves in providing absolutely the safest and best tasting wildgame for you and your family. We need your business, but please understand when we won't take chances with your food.

We've had lots of folks asking if we could slice the smoked hams, so we've done it! We've got whole hams and halves cut into slices. In addition, we have center cut ham slices and whole uncut hams. Give us a call to reserve yours! We'll be closed all day Christmas Eve and Christmas, so be sure to pick yours up by the 23rd. Give me a call if you have questions.
